No gluten (or lactose)Swedish Pancakes
1 doz. eggs
1 cup water
1 tsp. vanilla or lemon flavoring
3 cups rice milk
2 tsp. salt
3-4 cups spelt flour
Mix all ingredients. Add a little water if too thick.
Cook in bottom of 8-10 inch frying pan. (Lightly greased?)
For lactose free servings spoon thinned jam down the center, roll up and
spoon more jam over top.
Otherwise, fill with flavored, sweetened yogurt and top with the same or with jam.
Could also be served with a fresh fruit filling and sweetened whipped cream.
No Lactose & No Tomato
TURKEY MEATBALLS & ANGEL HAIR PASTA:
2 lbs. ground turkey
granulated garlic, onion powders, black pepper, curry (mild), 1/4---1/2 tsp.chili powder and parsley
flakes to your individual taste
Mix above ingredients and roll into any size balls. Brown
meatballs in some oil,or Pam type spray in a skillet
Lower heat, add 2 cans of Campbell's French Onion Soup, cover and let simmer for 20 minutes
Remove top, cut meatballs in halves to soak up soup, cover and cook for 20-30 min. more
Serve over angel hair pasta or your favorite kind.

Mix and sift:
2 cups rice flour
4 1/2 teaspoons baking powder
2 teaspoons brown sugar
2 teaspoons salt
Beat mixture while adding:
2 cups milk
Add and barely blend:
1 beaten egg
1 Tablespoon butter or margarine
(Makes about 18 - 4 inch pancakes.)
Stir with a wire whisk:
1 Cup rice flour
2 teaspoons baking powder
1/4 teaspoon salt
2 Tablespoons cocoa powder
3/4 Cup sugar
Add and mix:
1/2 Cup milk
2 Tablespoons melted shortening
Add and mix:
1 Cup chopped nuts
Pour into a greased 2 quart baking dish.
1/4 Cup brown sugar
4 Tablespoons cocoa powder
1 3/4 Cups hot water
Pour carefully over the batter.
Bake at 350 degrees for 40- 45 minutes.
